Camillo’s at The Manor New Delhi the newest pizzeria in town is all set to open its doors to the public soon. Travel+Leisure India & South Asia got an exclusive peek into all that’s in store.
Located at the iconic The Manor New Delhi, Camillo’s is all about lip-smacking pizzas in a relaxed ambience served with warm hospitality. The pizzeria is aimed at being a go-to destination for casual meals with friends and family, as well as a relaxed outpost for elaborate meetings.

Cuisine
Camillo’s primarily serves Neapolitan-styled pizzas, where the dough is central to the pizza’s excellence, along with the offerings of a modern-day bistro. The dough comes with 70 per cent hydration and then undergoes a comprehensive hot and cold proofing, I’m told.

Appetisers
We begin with ‘The Manor’ Caesar (INR 600). The pizzeria’s simple take on this classic is the prefect place to begin a meal. The Manor Caesar comes with a charred iceberg lettuce that lends the exterior a smoky taste, while the interior is cold and crunchy. All the flavours come together with an in-house dressing and herb oil.
We then move on to the Parmigiana Pizza Salad (INR 650). If there is one thing that you need to try on the menu, it’s this pizza. A full punch of flavours, this one is a delightful surprise. Here, the caramalised pizza base works as a large crouton in a salad bowl. The base is glazed with demerara sugar, cooked in the oven, and then topped with roman iceberg, arugula, and fresh fruits. For a kick, there is a mango and chili dressing, cherry tomatoes, kalamata olives, and balsamic lend the citrusy taste. The marinated feta cheese balances it all.
Main Course
For the mains, we start with a classic Sundried Tomato & Basil pizza (INR 600). A distant cousin of the classic margherita, it comes with candied tomatoes that have been dehydrated to a meaty consistency and topped off with fresh mozzarella and drizzled with pesto oil. Some extra credits go to the pizza for being extremely light and airy.
Next in line is BBQ Chicken Pizza (INR 900). At Camillo’s, the in-house sauces create all the magic. For the BBQ Chicken pizza, grilled chicken is tossed in the in-house barbecue sauce, spread on the base, cooked in the oven, and finally topped with sesame seeds and scallions.
Moving on to the big plates, we give the Prawns (INR 1,400) a shot. Glazed with an in-house garlic butter and sambal sauce, the prawns are cooked in the oven till juicy. While the cilantro topping ensures freshness, the sourdough on the side balances the crunch and flavour.
Some of the other must-try pizzas on the menu include Wild Mushroom & Burrata (INR 950), Caramalised Onion & Feta (INR 850), and Prosciutto Crudo (INR 1,200).
Dessert
We top it all off with the chef’s special Tiramisu (INR 610). Neither heavy on sweetness nor on the bitterness, it is one of the best ones we’ve had and highly recommend.

Tucked far away from the city’s conundrum, Camillo’s is a world within itself. Here, tradition meets innovation and the finest Italian flavours marry contemporary culinary artistry. Helming the culinary operations at the outpost is chef Sudeep Kashikar, whose creativity shines through the menu. Whether you plan a casual meal or an important meeting, the outpost can adapt itself to one’s needs. The toppings for pizzas have been crafted with a touch of local flair. A blend of Danish, local, and Italian cheeses are used to achieve a perfect taste.
